Zucchini Bread with Moringa

This Zucchini Bread with Moringa is delicious and packed full of nutrition! It’s especially good to have warmed up on a cold, Winter morning for breakfast. Enjoy!

  • 1 ½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 to 1 ½ teaspoon Organic Moringa Powder, to taste
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 1 egg, beaten 
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup zucchini, unpeeled and finely shredded
  • ¼ cup oil 
  • ½ cup toasted, chopped walnuts or pecans (optional)

Preheat oven to 350 degrees. In a medium bowl, whisk dry ingredients together. Set aside. In another medium bowl, combine egg, sugar, vanilla, zucchini, and oil. Mix well. Fold wet mixture into dry ingredients. Add nuts (optional). Spoon batter into greased 8x4x2-inch loaf pan. Bake for 50 to 55 minutes, until wooden toothpick or knife inserted into the center of the loaf comes out clean. Cool, remove from pan, and slice. Makes sixteen slices of Zucchini Bread with Moringa.
